Klebefleisch

Dr. Fritz Treiber aus dem Geschmackslabor Graz war zu Gast im ORF-Nachmittagsformat „Heute Leben“.

Der Molekularbiologe Dr. Fritz Treiber war am 8. September 2016 zu Gast in der Sendung "heute Leben" auf ORF 2.

Das Thema war Klebefleisch, auch bekannt als Formfleisch. Um Fleischreste, die bei der Produktion- und Weiterverarbeitung von Schlachttieren anfallen, nachhaltig zu nutzen, sind besondere Verfahren möglich. Eines dieser Verfahren arbeitet mit der so genannten Transglutaminase, einem Enzym, das Aminosäuren auf der Oberfläche der Fleischstücke verbinden kann.

Was wird dem Formfleisch noch zugesetzt? Gewürze, Aromastoffe, aber auch Füllstoffe wie z.B. Weizenproteine und Wasser. Ein klassisches Chicken Nugget enthält im Durchschnitt zwischen 54% und 64% Hühnerfleisch. Der Rest wird quasi "aufgefüllt".

Klebefleisch ist grundsätzlich unbedenklich was den Verzehr betrifft. Die Transglutaminase wird im Körper abgebaut.
